Susan Kay Knight Bennett

March 5, 1947 — October 8, 2022

Susan Kay Knight Bennett was born in Salt Lake City, UT on March 5, 1947 to Keith and Lila Knight. She was born premature but fought to not only survive but also thrive. She was the baby of the family, containing an older sister, Marlene, and two older brothers, Ronald and Steven Knight.
Susan spent many happy hours with Steve, especially as Marlene and Ron were older and out of the family home soon. While growing up, she met her best friend, Marguerite Searle, with whom she had many escapades throughout the years. She graduated from East High in Salt Lake City, and went on to attend the University of Utah and then BYU. At BYU she met and married Larry Don Bennett in 1968, with whom she had her son, Robert Bennett. They later divorced.
Susan raised Rob as a single mom, with all the challenges that implied in those early days. She persevered, however, and received her bachelor’s degree from BYU in elementary education. She then spent the next 25 years teaching in various schools in the Granite School District, including Plymouth and Truman Elementary where she happily taught second grade most years. She lived for her students, and especially enjoyed teaching them PE and art.
Susan had four grandchildren, who were the light of her life. She and her grandchildren would work together to create incredible displays for holidays and would delight in inviting others over to enjoy the magic of that season. Susan also loved to take her grandchildren to plays, movies and any other activities that she could think of to bring a child’s dreams to life.
Susan was an active member of The Church of Jesus Christ of Latter-day Saints and served in many callings from Relief Society president to Activity Days leader. Her faith was important to her and she contributed whatever she could to her ward congregation.
Susan spent the last years of her life battling Alzheimer’s disease and eventually moved to Sagewood at Daybreak to receive the care that she needed. She delighted both workers and patients at the care center by talking with them and inviting them to visit her always-decorated room. The family is especially grateful for the staff at Sagewood who so lovingly cared for her the last five years.
Susan is survived by one brother, Steven Knight; her son and daughter-in-law, Robert and Joylynn Bennett; four grandchildren and four great-grandchildren. She was preceded in death by her parents, and sister, Marlene Knight Riggs, and brother, K. Ronald Knight.
Funeral services will be held Monday, October 17, 2022 at 12:00PM at Memorial-Holladay Cottonwood Mortuary, 4670 South Highland Drive, Holladay, UT with a viewing beginning at 10:00 am at the same location. Interment will be at Wasatch Lawn Memorial Park, 3401 South Highland Drive, Millcreek, Utah.
