Jackie Lynn Kofoed

Jackie Lynn (Cook) Kofoed, beloved wife, mother, grandmother, and friend, passed from life Thursday, July 21st, in Midvale, Utah at the age of 72 after a years-long battle with kidney disease.
Jackie was born November 2nd, 1949, to Kenneth Milton & Beverly Faye (Greenwall) Cook in Salt Lake City, Utah, where she spent most of her childhood. She graduated from Bigham High School in 1968. She began dating and, in 1969 she married, Allen Murray Anderson, with whom she had three children. After divorcing, Jackie was encouraged by her parents to attend a weekly square dance. It was at one of these dances that Jackie met C. Rodney Kofoed, who she married on September 21st, 1984, in the Jordan River Temple. Rodney brought one son with him into the marriage, and a year after they wed, Jackie and Rod had their youngest son.
Jackie spent most of her career in customer service. She spent 22 years in the Blue Cross & Blue Shield of Utah Medicare-Part B department, where she trained and mentored many of her co-workers. She later spent 10 years as a reservationist for Jet Blue, the company from which she retired in 2017.
Jackie was beloved by everyone she met. Her kindness, gentle spirit, empathy, and humor endeared her to her family, co-workers, neighbors, and countless medical staff with whom she interacted. She had a talent for saying the unexpected, following it with a smirk, a laugh, and a flash of her bright-green eyes. She made each person she spent time with feel special, heard, and cared for.
Jackie took great pride in being a smart dresser. She had her hair done weekly and slept with her hands propping up her head to keep it from getting messed up throughout the week. Her clothes were always ironed, and her make-up was always on before she allowed herself to leave the house. She took great joy in decorating her front door with holiday-specific décor, in looking through her mail-order clothing catalogs, and in reading, most often the daily paper and her cookbooks.
Jackie was devoted to her children and her grandchildren. She sacrificed greatly throughout her life to make sure they were taken care of. Her heart had room for everyone, and she treated each family member as her own, whether they were blood-related or not. Her family will particularly miss her annual phone calls to each person on their birthday to sing to them and express her love.
She is survived by her husband, her five children and their spouses (Bradley Anderson, Allissa Blake (Dell), Aaron Kofoed (Stephanie), Kyle Anderson (Mindy), and Tyler Kofoed), 16 grandchildren, and four great-grandchildren, along with two siblings, Susan and Scott Cook.
She was proceeded in death by her parents, her youngest sister, Stacey Cook, and her son Eric Kofoed.
Services will be held at the Memorial Redwood Mortuary and Cemetery, 6500 S Redwood Road, West Jordan, UT 84123. A viewing will be held on Wednesday, July 27th from 6:00-8:00 PM. Funeral services will be the following day, Thursday, July 28th at 11:00 AM.
