Erika Fiedel

January 1, 1940 — June 22, 2022

Erika Irmgard Fiedel age 82 died peacefully on June 22, 2022, surrounded by her loved ones. She was born on January 1, 1940, in Schweidnitz, Germany to Herbert Poepel and Frieda Klara Kusber. She immigrated to the United States in 1958 and found her eternal soulmate. She married Manfred Norbert Fiedel on May 22, 1959, in the Salt Lake Temple. He was the love of her life. They did everything together.
Erika spent 35 years of her career in food services for local school districts with 23 of those years at Alta High School. She went back and got her high school diploma in June of 1987 to motivate her son to graduate high school. She was so proud that the same son later went on to obtain two Master’s degrees and is a practicing Nurse Practitioner.
Erika also had the biggest heart. This was shown through the loving act of taking in her daughter, Christina, and her family of 7 children, while Christina got her nursing degree. Erika and her daughter did everything together. Christina was then able to reciprocate the love she learned from her parents and took care of Erika until the day of her passing. Erika’s love will be cherished for many generations to come.
Erika loved spending time in the mountains. She shared this joy with her husband, kids, grandchildren, and great grandchildren. She loved life. She loved her family and always put them first. Erika made an impact on everyone she met. She was kind-hearted to all people and gave her all to make sure others were taken care of. Erika was referred to as a Princess and made sure she was treated as such. She was full of spunk and loved to make people happy and smile.
After the passing of her husband, Erika spent a majority of her time taking care of her grandson, Daxton. Erika always said that Daxton was her saving grace and gave her purpose to keep living life to it’s fullest. Daxton was considered her “Boy Boy”.
She is survived by her children Christina Fiedel, Maurice (Jessica) Fiedel; step-children Angelika (Brian) Christensen, Ursula (Ron) Witzel, Roland (Danielle) Fiedel; and many grandchildren and great grandchildren.
She is preceded in death by her husband Manfred Fiedel, parents, siblings Margot Neidermeier, Walli Sanger, Guenter Poepel, and granddaughter Courtnie Heywood.
Special thanks to Aspire Hospice for their exceptional service, compassion, and love they provided. With the utmost gratitude to Ellen (CNA) and Rose (Nurse) who went above and beyond, and also made sure her last months were comfortable and peaceful.
